"I'm sure you know how critical Italian-Americans
can be when it comes to food and cooking, because most of
them consider themselves "experts" in the field.
Well, you have achieved the impossible.
With a room full of these "experts," there was
not a single negative comment to be heard during the dinner-dance
or after it.
Everything I heard was extremely complimentary.
Comments about the quality and quantity of the hor d'oeuvres
and the gracious way in which they were served, was followed
by the tremendously well-received choice of soup course of
pastaefagoli or escarole and beans. The event went up hill
with the following courses of manicotti, salad and the choice
of chicken francaise or prime rib of beef.
Tom, you and your staff -- more than anything
our committee could ever do collectively, made our 6th annual
Columbus Ball a resounding success. Your courtesies and considerations
in pricing, and that personal "Apicella Touch" helped
not only make it an enjoyable evening for both Belleville
and Nutley Italian-Americans, but also contributed considerably
to our fund-raising efforts.
You and your family are truly good citizens
of Belleville. Your love for the township and its people
is evidenced in your life's work. May I extend to you on
behalf of our dinner-dance co-chairpersons, Ann Brave & Camille
Nazziola, and the entire committee, our heartfelt gratitude
and appreciation"
